This place is the real deal for authentic traditionally made phyllo and kantaifi (don't be fooled by the simple store front). They make their dough in small batches using the highest quality ingredients, supplying some of the best bakeries around with prepared dough for their baklava and other desserts. They sell both wholesale and retail at very reasonable prices. My wife is Greek and we bring dough from here back to the US every year (no special handling). The family has been making these specialty pastry doughs since 1935. If you ask about their products you will feel their pride and learn a few things about history and process of making dough! They speak some English, enough for simple exchanges, but it might help to have a Greek-speaker to learn more detail. Definitely worth picking up some dough here next time you are in Heraklion - you will taste the difference in quality and texture compared to any mass-produced grocery store doughs.
