Explained the process of extraction to the small details making his product 100% organic. Learned more than I ever could have imagined about what a true good olive oil consists of. Sampled 3 batches that were ready for bottling, and never have I ever thought EVOO smelt and tastes so different. Will recommend everyone to pay this small business a visit. Well worth the time spent.

During my stay in Crete, I have intensively studied and visited olive oil mills and was so happy to find one of the BEST on this island! Eftichis is knowledgeable about olive oil, but he also puts his whole heart to his products- starting with the crops to the packaging. There is minimum waste during the start of the process to the final product which other mills do not disclose! I highly recommend visiting and learn deeper in details about this small company. You will not regret!

Today I learned how light, heat and humidity affect the flavour of the oil. How plastic and artificial bottle colourings can affect the flavour of the oil. Why Pamako olive oil is topped with Argon gas and bottled in glassware that's baked at 800 degrees before use. The owner is the mad scientist of olives, he even makes his own olive refining machinery! You'll never look at oil the same way again.

The owner was not there (he is picking olive) so his mom was helping. It is a privately own company and you can tell the owner has put a lot of thought and take pride of his work. We bought two bottles in the end the mom gave me a flower. So cute. The best olive oil taste very good!
